This recipe gives you two large toasts, making it the perfect option for a satisfying light lunch or a delicious breakfast to share with a loved one.
You need:
2 thick slices of bread, lightly toasted ½ ripe avocado
A pinch of salt
A pinch of thyme
A pinch of parsley fresh or dried
A pinch of black pepper
1 teaspoon of Flax seeds or sunflower seeds
A drizzle of olive oil
6 cherry tomatoes
A handful of rocket leafs
Optional, 8 cubes of feta cheese
How you make it:
Smash the avocado in o bowl or on a shopping board.
Cut the cocktail tomatoes into halves.
Toast the bread and add a drizzle of olive oil.
Add the smashed avocado to the toast.
Top with cherry tomatoes, rocket leaves, Flax seeds or sunflower seeds. Optional, crumble over the feta cheese.
Add salt, pepper, parsley and time to taste
