Recipe For Barbeque Chicken Skewers with Saffron Spice Mix

Easy and delicious chicken skewers with saffron spice mix are great for a summer barbeque or as a Spanish tapa. Serve as it is, with bread and a Mediterranean yoghurt sauce and a summer salad on the side. This recipe for barbeque chicken skewers with saffron spice mix feeds 4 people.


Saffron Barbeque Chicken Skewers

For the Saffron spice mix you need:

  • 2 good pinches of quality saffron threads about 1/6 gram powdered finely in a pestle and mortar. Preferably smoked Spanish saffron

  • 2 tablespoons of sweet Spanish paprika powder

  • 3 tablespoons of smoked Spanish paprika powder

  • 2 teaspoons of garlic powder

  • 2 teaspoons of onion powder

  • 1/2 a teaspoon of cayenne powder

  • 1 teaspoon ground black pepper

  • A sprinkling of cumin and cloves powdered finely in a pestle and mortar

  • 1/2 teaspoon of salt


How you make the Saffron spice mix:

  1. Finely ground the spices in a pestle and mortar.

  2. Mix all the ingredients in a bowl until fully combined.

  3. Store the Saffran Spice Mix in an airtight spice jar.

  4. Use it whenever you want to.


Saffron spice mix

For the Chicken Skewers you need:

  • 2 two chicken breasts

  • 1 tablespoon of olive oil

  • 1 teaspoon of white wine vinegar

  • 2 tablespoons of water

  • 2 tablespoons of Saffron Spice Mix

  • 1 clove of garlic, minced


How you make the Chicken Skewers:

  1. Cut the chicken into cubes and add them to a bowl or a plastic bag.

  2. Add the oil, water, minced garlic, vinegar and Saffron spice mix to the chicken. Stir until the chicken is covered by the marinade.

  3. Place the chicken in the refrigerator for a minimum of 4 hours or preferably overnight.

  4. When the chicken has marinated, add the pieces to barbeque skewers. Make sure not to overcrowd the skewers.

  5. Barbeque the chicken on high heat until completely done inside.

Enjoy with a fresh salad and bread on the side. Serve with a Mediterranean yoghurt sauce.
